Laboratory Testing, Every Season
After each harvest and extraction, we submit our olive oil to comprehensive analysis by an accredited laboratory. These tests include:
- Free acidity, peroxide value, K232/K270
- Panel test (sensory evaluation)
- Pesticide residue analysis
- Mineral oil hydrocarbons (MOSH/MOAH)
This detailed profile confirms that the oil meets — and often exceeds — the legal criteria for extra virgin olive oil, ensuring that our customers receive a product that is clean, fresh, and full of flavor.
Grown with Integrity: Organic in Progress
Our entire estate has been under organic conversion for the past three years, following EU regulations. While we await final certification, we are already committed to organic farming principles: no synthetic inputs, balanced soil care, and a holistic approach to ecosystem health.

Processing and packaging are currently carried out by certified facilities that uphold the same food safety and traceability values we do. This collaboration allows us to maintain consistency and hygiene, while focusing on what we do best: producing exceptional olives.
We also maintain full internal traceability, ensuring every batch of oil can be linked back to the grove and harvest it came from.
Planning Ahead: Vertical Integration
Looking forward, we are preparing to build our own olive mill and packaging unit. This will bring every step of production under our direct control — deepening transparency, improving efficiency, and giving us even greater power to protect the quality of our oil.
